Lehsan ka Achaar is for those who love it bold: whole garlic cloves, peeled by hand and cured in red-chilli mustard oil with nigella until they turn mellow, tender and deeply savoury.
A spoonful lifts plain rice, daal or a simple roti. Sealed in a faceted glass jar with a gold lid.
Storage & serving
Keep the cloves under the oil. Store in a cool, dry place; after opening, always use a clean, dry spoon.
